Application examples

Agar for specialized applications

Different applications. Specific functional requirements.

Agar can provide structure, carry ingredients or support separation and cleaning processes. These examples illustrate how its gel properties can serve different application needs.

Conservator working on a painted surface

Art conservation

Agar gels can be applied directly or as preformed sheets to help remove surface deposits from materials such as plaster and paper. The gel holds the cleaning liquid in place and can be lifted away after treatment.

Caviar-style gel pearls in a food application

Caviar-style pearls

Agar can be used to produce caviar-style gel pearls in different colors and flavors. These small, firm beads provide a decorative alternative to fish roe for garnishes and prepared foods.

Translucent blue beads illustrating encapsulation

Microencapsulation

Agar can form a matrix around small particles or droplets. Encapsulation can help protect the enclosed material, make it easier to handle and influence its release, depending on the formulation and process.

Translucent red culinary gel pearls on a dark ceramic plate

Spherification & molecular gastronomy

Agar sets on cooling to create firm pearls, shaped gels and other culinary textures. Its gel strength and melting behavior help determine the structure and serving conditions of the finished preparation.

Milk and cheese products illustrating dairy-style textures

Plant-based alternatives

Agar offers a seaweed-derived alternative to gelatin in selected formulations. It can also provide structure and bind water in plant-based foods, including cheese alternatives.

Clear liquid in a clarification application

Gel clarification

Agar gels can trap suspended particles so that a clearer liquid can be separated and recovered. The technique can be used with beer and other liquids as an alternative to gelatin-based gel clarification.
