BIVI Sauces system is developed to be used as stabilizer in emulsified sauces sterilized after homogeneization, but it works perfectly in many different applications.
In BIVI Sauces system are present both hot and cold soluble stabilizers with both emulsifying and stabilising functions.
Thanks to the special combination of emulsifiers and hydrocolloids, the various types of BIVI Sauces blends suit many different sauce recipes with cold technology, pasteurization, sterilization with aseptic filling, with low or high acid tenor, with low/medium/long shelf life.

 

                    

 

Specially interesting are the series of BIVI Sauces D, particularly studied for vinaigrette dressing with oil and herbs in suspension.
