emulsified sauces sterilized after homogeneization, but it
works perfectly in many different applications.
In BIVI Sauces system are present both hot and cold soluble
stabilizers with both emulsifying and stabilising functions.
Thanks to the special combination of emulsifiers and
hydrocolloids, the various types of BIVI Sauces blends suit
many different sauce recipes with cold technology,
pasteurization, sterilization with aseptic filling, with low
or high acid tenor, with low/medium/long shelf life. |
