BIVI Drink
system is based on selected hydrocolloids especially studied
to offer stability to acid drinks like juices, nectars, acid
milk shakes.
Its main function is to give a physical stability keeping
vegetable fibers in suspension for the whole shelf life of
the product.
BIVI Drink is able to protect milk proteins in acid
environment and therefore finds its application in acid milk
shakes where the addition of fruit juices and other organic
milk acids lower the pH below the casein isoelectric point
that may cause precipitation. |
